  • Garlic
  • 2 bell peppers
  • White part of leek and basil

  • Salt
  • Chili
  • Cooking oil

Sautéed kidneys are a highly appreciated dish made in Cameroon, prepared with beef or pork kidneys sautéed with onions, bell peppers, tomatoes, and spices. This flavorful dish, whose preparation varies by region and personal preference, is appealing for its rich taste and tender texture. It is generally accompanied by rice, plantains, or yams, making it a staple of Cameroonian cuisine.

Roasted Cow Kidney recipe :

  1. Remove the fat and membrane surrounding the kidneys.
  2. Remove the urinary network with the tip of a knife.
  3. Then cut them into pieces and rinse them under running water.
  4. Heat oil in a pan and sauté the kidneys for 5 minutes. Add the minced onion and garlic. Stir for 2 minutes before adding the white part of the leek and the bell peppers cut into strips. Stir again and let simmer for 2 minutes.
  5. Add the diced tomatoes and season with the 4 spices, and paprika. Mix again.
  6. Salt and pepper. Let simmer for 15 to 20 minutes, stirring occasionally. Sprinkle with parsley at the end of cooking.
