This distinctive black sauce, known as mbongo among the Bassaa, is a traditional Cameroonian specialty. While it can be made with either fish or meat, mBongo tchobi specifically refers to the fish version, as tchobi means fish in the Bassaa dialect. Conversely, Bongo Nougha is the meat variation, with nougha meaning meat.
Mbongo tchobi is a flavorful fish dish cooked in a rich, spicy sauce made from tomatoes, onions, and a special blend of traditional spices. It's typically served with rice, ripe plantains, cassava tubers, or fried plantains, and can also be prepared with prawns for an even richer, aromatic experience.
Mbongo tchobi recipe
- Marinate the fish: Place the cleaned fish in a bowl and add salt. Let it sit for 30 minutes to absorb the salt.
- Season the fish: Add seasoning cubes, the pepper mix (ginger, garlic, and pepper), bebe, and white pepper. Mix well.
- Add tomatoes and njansang: Pour in the blended tomatoes and njansang, then mix everything with the fish.
- Incorporate the Mbongo tchobi spices: Add the Mbongo tchobi spices to the bowl and mix thoroughly.
- Prepare the pot: Preheat your cooking pot and add cooking oil.
- Fry the onions: Put the chopped onions in the heated oil and cook for 1 minute.
- Cook the fish: Place the marinated fish and the mixture into the pot. Let it simmer on low heat for 10 minutes.
- Monitor the cooking: Shake the pot occasionally to prevent the fish from sticking or burning.
