  • 2 kg of beef with bone
  • 2 large onions
  • 4 large carrots (with tops)
  • 4 celery stalks (with leaves)
  • 3 bay leaves
  • 10 black peppercorns
  • Apple cider vinegar
  • Salt

Description of beef broth

The beef broth from Taso Lounge restaurant is a simple and flavorful recipe that begins with seasoning the meat with salt and pepper. Then, a blend of vegetables (onions, garlic, tomato, celery) is blended and added to the meat, which has been lightly browned in a bit of oil. The mixture is simmered in about 1.5 liters of water for 30 minutes to create a fragrant and comforting broth, best enjoyed hot with a side dish of your choice.

Recipe of beef broth

  1. Sterilize the jar(s) and lid(s) in boiling water for 10 minutes. Rinse the meat with water and cut it into pieces. Peel the onions and roughly chop them. Wash the carrots and celery, and keep them whole.
  2. In a pot, place the meat and add the onions, whole carrots, and celery stalks. Bring everything to a boil for 20 minutes without adding water, allowing the meat to release its own cooking juices.
  3. Add salt when the meat’s cooking juices begin to reduce. Then add water until it covers the meat and vegetables, and let it simmer for about twenty minutes.
  4. After this time has passed, strain the cooking juice using a fine sieve. Keep only the vegetables and set the beef aside in the fridge for later use. In the pot containing the cooking juice, return the vegetables. Add the peppercorns, bay leaves, and apple cider vinegar, then let it simmer for 15 minutes.
  5. Strain the broth. When transferring it to jars, remove the excess fat from the surface of the broth. Pour the broth into a jar, leaving about 2.5 cm of space between the broth and the rim. Store in the refrigerator for future use.
